Chicken and Peppers with Black Bean and Garlic Sauce


Ingredients: 


  • 1/2 lb Chicken thighs- cubed
  • 2 Bell Peppers- cubed 
  • 2-3 TBSP Black Bean Garlic Sauce (I used Lee Kum Kee brand)
  • 1 TBSP Chinese Rice Wine 
  • 1 tspn soy sauce
  • 1 tspn sugar 
  • Ginger- 2-3 1/4inch thick coin size pieces
  • 1 TBSP Olive Oil 
  • Cilantro for garnish
  • Sesame oil (optional)


Directions:


  • In a pan, put a tablespoon of olive oil and heat on medium high heat. 
  • Once oil is hot put in the ginger and chicken pieces. Sautee for a few minutes until the chicken is lightly browned. 
  • Next add Chinese wine and sautée.
  • Also add the Black bean garlic sauce, soy sauce, sugar and cook over medium heat for 8-10 minutes or until chicken is thoroughly cooked.
  • Now add the bell peppers and continue to stir and cook for additional 2-3 minutes. You can add the peppers earlier for softer texture. To keep a crunchy texture, add the peppers in later! 
  • I added some sesame oil at the end and mixed everything well for some extra flavor.
  • Garnish with cilantro or green onion and serve with rice!!
