Chicken and Peppers with Black Bean and Garlic Sauce
Ingredients:
- 1/2 lb Chicken thighs- cubed
- 2 Bell Peppers- cubed
- 2-3 TBSP Black Bean Garlic Sauce (I used Lee Kum Kee brand)
- 1 TBSP Chinese Rice Wine
- 1 tspn soy sauce
- 1 tspn sugar
- Ginger- 2-3 1/4inch thick coin size pieces
- 1 TBSP Olive Oil
- Cilantro for garnish
- Sesame oil (optional)
Directions:
- In a pan, put a tablespoon of olive oil and heat on medium high heat.
- Once oil is hot put in the ginger and chicken pieces. Sautee for a few minutes until the chicken is lightly browned.
- Next add Chinese wine and sautée.
- Also add the Black bean garlic sauce, soy sauce, sugar and cook over medium heat for 8-10 minutes or until chicken is thoroughly cooked.
- Now add the bell peppers and continue to stir and cook for additional 2-3 minutes. You can add the peppers earlier for softer texture. To keep a crunchy texture, add the peppers in later!
- I added some sesame oil at the end and mixed everything well for some extra flavor.
- Garnish with cilantro or green onion and serve with rice!!
