Quinoa Bake with Red Kidney Beans, Tomatoes, Jalapeños and Cheese!
Hello Everyone! Back after awhile with another recipe post. Today's post is an improvisation/experiment of sorts but turned out super delicious!! It was easy to make and super tasty to eat :D We finished the whole dish! Read below to find out more about how to recreate this dish! Feel free to improvise with your own ingredients :D
Ingredients:
1 cup white quinoa, washed well and drained
2 cups water (or stock)
1 cube chicken bouillon or powder mix
2 Plum tomatoes, diced
1 Can Red Kidney Beans, washed and drained
1 Bell Pepper, diced
Pickled jalapeños, diced (optional)
Black pepper
Cheese (of your choice) - I used shredded mild cheddar and mozzarella
1 TBSP olive oil
Salt to taste
Red chilli flakes (optional)
Green scallions, chopped
Directions:
Preheat oven to 350 degrees Fahrenheit.
Place cast iron skillet on stovetop over medium heat, and add one table spoon of olive oil.
Add washed quinoa and sautée lightly for 1-2 minutes for a toasted flavor.
Next add the red kidney beans, water, chicken bouillon, salt, black pepper and mix.
Lower the heat, cover and let cook for about 12 minutes, stirring occasionally.
Next add the tomatoes, diced bell pepper, jalapeños and red chilli flakes. Mix well.
Continue to cook for another few minutes, stirring to make sure the quinoa doesn't stick to the bottom of the pan.
Turn off the heat and top with cheese.
Place in oven for about 10 minutes or until cheese is melted.
I switched my oven to broil for another few minutes to get the cheese more golden brown.
Take out of oven and top with green scallions!! Dig in!! :)
