Oven Roasted Bell Peppers with Mozzarella Cheese



Tried making this side dish because I had a bunch of sweet bell peppers and wanted an alternative to eating them in salads. It turned out Amazing!! The sweetness of red, yellow, and orange bell peppers is delightful and coupled with the saltiness of mozzarella cheese is a perfect combo!

Ingredients:

2 Bell Peppers, cut in halves longways (you could also cut in quarters)
Olive Oil 
Cooking spray
Mozzarella Cheese- shredded
Salt
Black Pepper 

Directions: 

Preheat Oven to Broil 
Line a baking sheet with foil. 
Place a baking rack, like one in photo, on top (this makes the peppers less soggy).
Spray the baking rack with your favorite cooking spray. 
Cut your bell peppers into halves, longways and brush with light coating of olive oil. 
Place the halves on the baking rack and sprinkle with salt and black pepper. 
Next top the peppers with the amount of cheese you like!!
Now place in oven for 10-15 minutes. After this time check on the peppers and take out once the cheese is bubbly!! Since this is on Broil setting, make sure not to burn the peppers!! Keep in slightly longer for golden brown cheese :)
