Poached Eggs with Mock Hollandaise Sauce
Craving the tangy and savory flavors of Hollandaise but short for time and wanting a healthier option? Try this quick alternative → Lemon-Dijon-Mayo Sauce. While it does not taste exactly like Hollandaise, it comes pretty close in terms of the blend of saltiness, sourness, and creaminess. It's also a lot healthier!!

Ingredients:
For Poaching:
4 Eggs
Water
Salt
White Vinegar
For Sauce:
2 Tbsp Light Mayonnaise
1 Tbsp Dijon Mustard
1 Tbsp melted butter
1/2 Lemon juice
Salt
Black Pepper
Directions:
For the eggs:
Fill a saucepan with water at least halfway, and place on stove over medium heat.
Add 2 tsp of salt to the water.
Add 1 tsp of white vinegar to the water.
Line a plate with paper towel and set aside.
Crack one egg into a small bowl (like a small rice bowl) and set aside.
Once you see bubbles and the water begins to boil, turn heat down to low.
Gently immerse the edge of the bowl into the water, slowly tipping the bowl until the egg slides out into the water.
Let it cook on simmer for approximately 4 minutes.
Once the time is done, use a slotted spoon to take out the egg and place onto the paper towel. Repeat for rest of eggs.
For the sauce:
In a bowl, combine the light mayonnaise, dijon mustard, melted butter, lemon juice, salt and pepper to taste. Mix well until a smooth and creamy consistency is achieved.
Once ready to plate, spoon the sauce (as much as you want) onto each egg.
Garnish optional! I used some fresh cilantro, you could also use parsley or anything else of your choice.
