Super Easy ~Baked Potato~

This is a simple recipe and idea, but one I thought I would share because this recipe works out great every time!
Dress yours however you like, with your favorite toppings!! I topped mine with Cheddar, Colby and Monterey Jack cheese, sour cream, freshly ground pepper and cilantro.

Yields 2 Baked Potatoes
Ingredients:

  • 2 Large Russet potatoes, washed and scrubbed well, peel on
  • Canola Oil
  • Salt, I used Pink Himalayan Salt
  • About 1/2 cup Cheddar cheese, shredded
  • About 1/2 cup Colby and Monterey Jack cheese, shredded
  • 1 TBSP Sour cream
  • Black pepper

Directions:

  • Preheat oven to 350 F.
  • Wash russet potatoes thoroughly and set in a dry bowl.
  • Line a baking tray with foil, set aside.
  • Using a fork, poke about 8-12 holes around the potato.
  • Coat both potatoes lightly with canola oil and salt (I used pink Himalayan salt).
  • Place both potatoes on the foil lined baking sheet.
  • Bake potatoes for about one hour at 350 Fahrenheit.
  • Remove from oven, using oven mittens and a knife cut a vertical slit in each potato and carefully sprinkle about 1/4 cup of each type of cheese into potatoes
  • Put it back in the oven for about 5 mins or until cheese is melted.
  • Once cheese is melted, remove from oven and add the rest of cheese 🧀 , sour cream, pepper and cilantro or any other toppings of your choice. 😋

Enjoy!!
