Hearty Quinoa with Kale
Ingredients: 1 cup quinoa, washed well and drained 1 chicken boullion/ broth 2 cups water Kale stalks, cleaned well and chopped or you can use bag of precut kale or frozen kale Cherry peppers (optional) 1 medium Bell Pepper Jalapeños (optional) Olive Oil 1 Medium Onion, diced 1 tablespoon minced garlic Salt Pepper Directions: In a saucepan over medium high heat, add one tablespoon oil. Add onions and sauté until onions are translucent. Add garlic and sauté for another 3 minutes. Add the quinoa and lightly toast for 2 minutes. Next add 2 cups of water to the pan. Add chicken bullion/ seasonings of your choice. Next add the kale and cook for 10 minutes covered, over medium heat, stirring occasionally. Add chopped peppers of your choice and continue to cook uncovered for an additional 5-10 minutes, stirring or until quinoa is cooked fully. Add black pepper to taste. Enjoy!!
